This slaw totals 340 calories a serving and packs in so much flavor your tastebuds will thank you!
SHRIMP MANGO SLAW
Ingredients
1 Medium Firm mango
2 Cucumbers
1 red Bell Pepper
1 small onion
3 sprigs cilantro
Juice of 1 lemon
2 cloves garlic crushed
salt and pepper to taste
1 lb Medium shrimp
- Peel and devein shrimp rinse with 1/2 lemon juice. Season with salt and pepper then steam for 5-7 minutes. Put aside to cool.
- Cut all remaining ingredients into 1/4 inch strips, place in bowl add lemon juice, garlic, salt and pepper let marinate for 10 minutes.
- Add Cilantro and Shrimp and chill for 30 minutes then serve.
- Enjoy!!!
