2 1/2 cups Sugar 3 sticks Cinnamon 1 tsp Cloves 1 tsp alt Red Food Coloring 4 Bay leaves 1/2 tsp ground pepper (optional) Cut Mangos, remove inner seed and cut mangos and outer seed into strips Add all other ingredients into pot and cook covered for 30 minutes. Uncover stir and let cook for a further 30 minutes uncovered, stir frequently to avoid sticking. Remove from heat Cool, chill, enjoy!
This recipe gave so much joy as a child growing up in Trinidad. We would have every version of Mango we gould in general doing every possible cooking technique on them as they were plentiful and cheap! This Candied Red Mango was a FAVE though, no matter the source of the treat, everybody's grandmother or auntie would make the yummiest version of this dessert that would make your tastebuds do a happy little jig!
