Grandma Patsy's Super Good Coconut Drops!

If you are from the Caribbean we KNOW you've had a version of these delicious morsels at some point in your life. 






Made primarily of freshly grated coconut  and flavored with the spices of the islands, these treats taste of vanilla and nutmeg and LOVE!
Our CEO's mom has magic baking hands and this precious recipe has been handed down within the Cyrus clan for many years and though every clan-member's version is delicious, no one has been able to perfect it the way Grandma Patsy has...why not try your hand??

Old-fashioned Coconut Drops



  • 3/4 cups sugar, granulated
  • 1 egg, 
  • 1 1/4  tsp. pure vanilla extract
  • 2 1/2  cups flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp grated nutmeg
  • 1 tsp  Angostura bitters (optional)
  • 1/4 cup raisins, seedless
  • 1/4 cup currants
  • 2 1/2 cups freshly grated coconut
  • 2 ozs. Butter, salted

Directions


Preheat oven to 350 degrees

Combine all dry ingredients in large bowl and mix thoroughly.

In separate bowl combine sugar and butter, cream slightly until sugar grains are no longer visible then add egg.

Add  vanilla, bitters to liquid mixture and blend well. 

Pour liquid mixture into the dry ingredients and press together. Very little water can be added if necessary to combine mixture into a stiff dough.

Using a tablespoon, scoop out heaping spoonfuls of the dough onto baking tray.

Bake for 20 minutes until slightly golden then sprinkle with a bit of sugar while still hot.
